Farmer’s best to snap, crackle and pop at Bushman’s Dinner

Bacon hearts again is St Lawrence’s premier pork this June as it’s set to crackle in the spotlight at the Bushman’s Dinner.

Bedford Park pork will star amongst the locally home grown produce along with Central Queensland’s best meat and vegies.

The mouth-watering three-course meal is sure to hit the spot after a busy day exploring the iconic and unspoilt riches of the St Lawrence Wetlands.

Isaac Regional Council Mayor Anne Baker said the Coleman family have lived in the Isaac region for more than 18 years.

“Moving to St Lawrence in 2014, they started their pig farm to show others the great taste and benefits of free-range pork farming” Mayor Baker said.

“With more than 200 pigs at the farm, Bedford Park raise their animals using no antibiotics or hormones.

“They make it their concerted effort to make sure their pigs are happy in their growing environment and are fed the best diet.”

Award winning camp oven cooks The Bait Layers will be at the coals over the Wetlands Weekend as well as preparing a scrumptious feast for this year’s Bushman’s Dinner.

These camp oven cooks have been on top of their game for over a decade, winning the Australian Camp Oven Cooking Championships in 2004, 2006, 2016 and 2018.

The 2016 competition also saw them winning the Champion of Champions competition and placing in every category.

The menu will also include mud crab caught by professional fisherman from the pristine waters of the Isaac coast and strawberries from Gillinbin Creek Produce, north of St Lawrence.

Be sure to visit The Bait Layers for cooking demos throughout the day on June 8 and Mackay band Mango Junction will be back again to rock the wetlands at night.

St Lawrence will burst into life with an immersive experience of creativity, education, family fun, live entertainment and mouth-watering food this June 7-9.

Festivities will kick off Friday, June 7, from 5pm with the Welcome to Wetlands evening at the St Lawrence Hotel.

Matt Golinski, who whisked his way around the Isaac’s premier nature adventure last year, is back with the Greater Whitsunday Food Network (GWFN) Farm to Plate celebrations.

Costa Georgiadis, who is a presenter on ABC television’s Gardening Australia, will also be digging into his field of knowledge to share at weekend.
